BREAKFAST BARS

(Gluten Free)

Pre time 10min

Cooking time 30min

100g butter

25g brown sugar

2 Tblsp golden syrup

125g millet flake/ quinoa/amaranth (whichever is easiest to get)

50g quinoa

50g pitted prunes chopped

75g sultanas

25g sunflower seeds

25g chia seeds

25g linseed (flaxseed)

40g unsweetened desiccated coconut

2 eggs

 

v  Beat together butter, sugar and syrup in a large bowl until creamy. 

v  Add all other ingredients and beat until well combined

v  Spoon mixture into a baking paper lined tin (28cm * 18cm) and level the surface with the back of a dessertspoon

v  Place in a pre-heated oven at 180°C for approx 30 minutes or until dark golden brown on top

v  Turn out onto a board and cut into 9 fingers.  Store in an air tight container for 5 days.

 

Note:

This is a great way to start your day and easy to take on the run.  I make a batch at the start of the week and then breakfast is sorted.

Most things in this recipe can be easily substituted if there is something you don’t like or you want to experiment.
