Here is a recipe that will give you perfect pikelets each and every time. It is simple and easy, my two favorite words.
1 1/2 cups self-raising flour
1 Tablespoon sugar
1 1/3 cups milk
1 Tablespoon melted butter
Add all dry ingredients and make a well in the middle. Add the eggs and milk and whisk together. Leave sit for 10-15 minutes. Just before you cook add in the melted butter and stir through. Cook in a hot pan. I use olive oil when I cook mine and make them about 10cm in diameter, but you can make them any size you like.
